Ecolog Catering are looking for a "pure operator" to serve as Operations Director for its global catering projects.

You MUST have remote site experience and have worked in oil & gas, or mining operations.

The responsibilities of this position are listed below:

Prepare, implement and supervise all Ecolog Catering’s operation policies and procedures.

Define and control all ISO standards and requirements.

Supervise and control all operation personnel in the company.

Define, control implementation and maintenance of all Health and Safety measures including Accident prevention policies and procedures for the company.

Control and deliver profitability of operations and control all operations overhead.

Support BD department in the costing of bids.

Define with his team the master list of products and support the controls of Procurement department by CEO.

Organize the operations structure to meet the deadlines imposed by prospects and clients.

Constantly available to his Staff to assist in any issues that may occur.

Support the company’s CEO on strategy development and overall management of the company.

Shape and develop department strategy and organization.

Ensure proper report structure with departments.

Help identify opportunities and areas for improvement within each division.

Advise the CEO on strategic business development and key corporate planning issues that relate and impact the operations of the company.

Determine resource allocation among divisions.

Keep the CEO informed about business activities, performance, opportunities, and recommended courses of action.

Lead managers to evaluate and take actions that are consistent with the company's overall strategy.

Challenge basic assumptions underlying each division's operations.

Set performance goals tailored to each division.

Develop operational goals for each division which are aggressive, yet obtainable, and tied to long-term goals of the company.

Monitor division performance against performance goals to ensure progress is being made and corrective action, if necessary, is taken.

Ensure adherence to annual budgets.

Key Responsibilities:
• Prepares project master program and necessary updates.
• To work with all project disciplines to ensure understanding of total project cost budget allowances and targets.
• Prepares the cash outlay forecasts & Review of budget estimates & constraints.
• To plan, organize and supervise collection of data and issue of project cost reports and preparation of cost forecasts.

• Track the project’s progress versus its budget and timelines. Track the quality of deliverables. Identify and mitigate issues and risks in each phase of the project.
• Timely follow-up with the management teams on all issues related to new store development.
• Ensure high quality of project implementation.
• Responsible for total integration of project cost control and reporting activities.

We are looking for an experienced Restaurant Manager to join their Restaurant group in Kuwait.

Interviews will be held in Dubai at the start of June.

JOB OVERVIEW

The job holder will be responsible for managing the P&L and driving sales for the restaurant through efficient operations, customer service delivery, food quality, motivation and retention of restaurant personnel and adherence to company standards.

KEY RESPONSIBILITIES

Customer Focus
• Effective resource planning for customer service
• Ensure regular training of restaurant staff on all aspects of customer service, product knowledge and selling skills
• Implements a high standard of customer focus within the restaurant
• Regularly assesses customer service standards within the restaurant
• Create seamless customer service orientation among employees by ensuring timely and efficient customer service
• Ensure customer needs are met and complaints/ queries are resolved in a timely manner
• Assess mystery diner feedback and prepare action plan for improvement

Sales and Commercial Profit
• Achieve the revenue targets for the restaurant
• Actively seeks ways to achieve or exceed restaurant sales targets including upselling and promotions
• Monitor and control expenses (overtime/ wastage etc) through efficient restaurant operations
• Interpret and act on operational profit and sales reports generated through finance and focus on improving under-performing areas
• Monitor sales performance against last year, last week and budget on a daily and weekly basis and to give feedback to managers and also to communicate to staff

Restaurant Keeping and Standards
• Ensure accurate stock ordering and management (stock ageing, stock loss, space management) within the restaurant
• Oversee and monitor all point of sales activities in the restaurant which includes - sales transactions, registering sale and maintaining inventory updates, providing service, handling wastage, gathering consumer data for feedback etc
• Ensure that the restaurant is in compliance with the company policy for all employment and state laws, including wage and hour, human rights and equal employment opportunities
• Ensure the company policy and procedures are communicated in a timely manner and adhered to accordingly
• Oversee cash transaction entry and management (petty cash, pos cash elements, change floats)
• Regularly audit own restaurant administration and resolve any issues
• Maintain high standards of visual appearance throughout the restaurant including all kitchen areas
• Maintain a high level of restaurant health and security
• Ensure seasonal peaks, important trading/ promotional events are taken account of when preparing forecasts and staff rosters

People Management
• Ensure restaurant expectations and priorities are communicated to staff
• Ensure strong knowledge on Upsells, specials and promotions across all menu
• Review and provide regular feedback on staff’s performance against expectations
• Carry out regular and relevant in- restaurant training and enroll staff on relevant Learning and Development courses
• Support induction of new recruits
• Monitor staff welfare (staff accommodation and transport) and facilitate complaint resolution
• Oversee staff development and drive motivation levels of the restaurant associates
• Ensure effective resource planning and succession planning

Key External Interaction with

Responsible for planning and procuring items needed by the Company at most competitive prices and as per approved specifications

1. Detects and calculate needs of the company by using U.I.Ps and procure goods as per specifications and at most competitive prices. Obtains usage forecast and promotion plans from the Marketing and operations managers of various brands.
- Obtains stock status report from the warehouse.
- Obtains stock consumption report from finance dept.
- Prepares U.I.P based on the stock status, consumption report and sales forecasts.
- Negotiates prices and payment terms with the suppliers
- Negotiates freight rates with shipping companies.
- Ensures all products supplied by the suppliers are quality products as per franchisors specification.
- Develops new suppliers for various products and also develops supplier’s database.
- Monitors market prices for various raw materials and in various currencies and ensure best prices are negotiated.
- Monitors budget prices and ensures the stock prices are within or lower than the budget.
- Supports restaurant operation in launch of new products & opening of new restaurants on time.

2. Plans and maintains optimum stock levels and ensures no item is overstocked or under stocked.
- Monitors stock status reports to check the movement of goods.
- Monitors the arrival date of goods to ensure all the goods are arriving on time and to take corrective action in case of variations in the orders.
