In 1860, Mohammad Zalatimo, opened a small pastry shop in the old city of Jerusalem to make pastry called Mutabak. After having established a strong brand name in Palestine, in Arabic sweets, we felt the need to expand into neighboring markets to serve a wider clientele base who faced difficulties accessing our Zalatimo shop in Jerusalem, due to political problems. So, after graduating with a degree in marketing from the United States, Abdallah Zalatimo had a strong urge to rejuvenate his family heritage and fulfill his father’s passion, who chose a different career to pursue in the medical field. After facing a lot of challenges, we re-established the Zalatimo name in our first retail shop outside Jerusalem. In Amman, Jordan in 1985, Zalatimo Sweets took its first steps in becoming a highly demanded international product offering the authentic Zalatimo Sweets taste that everyone loved. The main challenge in this kind of business is to find the right recipe of applying modern manufacturing techniques and managerial skills in a traditional business without compromising the products’ authenticity and quality. We make it a point, to regularly visit trade fairs around the world to keep abreast of the latest developments in our field and apply them to our growing business. We now have an excellent set of Standard Operating Procedures that documents our techniques and recipes in order to provide our customers with a consistent excellent quality product that they expect from The Zalatimo Sweets Co.
