under server manager>Diagnostics>performance>there's already a default monitor, or you can create and edit a new one dedicated data collector to which process you want to monitor
To Analyze server 2008 r2 performance, download microsoft server performance advisor then install it.....it will run and find all issues in server which is occurring and monitor performance also.
