I write in English & have had work published in respected literary journals. What job opportunities are there in the Gulf for someone with my skills?

It depends on your field, there are a few respectable universities here in UAE where you could apply as an instructor/lecturer.  American University of Dubai, Canadian University of Dubai, American University of Sharjah, NYU Abu Dhabi are ones I can think of off the top of my head.  Good luck!
