For prepare any kind of food the person need proper knowledge who is going to prepare that food he should be expert in that cousin. For example If the Chinese cook or chef order to prepare pasta then its bit difficult to him but the executive chef can prepare it well than other. Need good knowledge, good sence of humour, understand what exactly the customers or guest want to order, make changes in dish as per guest requirement then you become successful.
