Why do companies looking for an employee with many years experience does it determine how good the employee will be in your company?

Applicants having many years of experience mean that they have already handled relevant job with regards to the position they are applying. Every company wouldnt like to risk hiring applicants with less experience since hiring experienced applicants means more trust and less spendings for training and etc.
